In this recipe we're pan-frying it in vegan butter with fresh sage and crunchy walnuts. This dish is so indulgent and delicious, and it's absolutely perfect for special dinners and holidays. Poke a few holes in your @sweet potatoes{900%g} with a fork or knife, then place them on a microwave-safe plate. #Microwave{} them until they're easily pierced with a knife, initially checking them after ~{5%min}, then every one to two minutes after that. (You can also bake them for ~{1%h} at 200°C). Place a #large pot{} of @-water{} on the stove over high heat. You can turn the heat down if it boils before your gnocchi are ready, but you'll want it to be at a rolling boil once they're ready. Cut the @&(~2)sweet potatoes{} open and let them cool a bit while you gather your other ingredients. Once the @&(~3)sweet potatoes{} are cool enough to handle, scoop out the flesh and transfer it to a #large mixing bowl{}. Use a fork or potato masher to mash. You should end up with about 2 cups of mashed sweet potato. Mash @salt{1%tsp} and @nutmeg{1/8%tsp} into the @&(~1)sweet potatoes{}, then begin adding @flour{3/2%cup}, about 1/2 cup at a time. Keep adding flour until a soft dough forms, using additional flour if needed. Be careful not to overwork the dough. Lightly flour a work surface, then divide the @&(~1)dough{} into three or four portions. Roll each portion into a 1in thick snake. Cut each @&(~1)dough snake{} into 1/2in pieces. You'll get around 40 pieces. Optionally, use a fork to crimp each of your gnocchi. Once all of the @&(~1)gnocchi{} are made, carefully transfer them to the @&(~6)boiling water{}. Boil them until they float, which should only take about ~{3-4%min}. Drain them into a #colander{}, or remove individually with a #slotted spoon{}. Melt @vegan butter{30%g} in a #large skillet{} over medium heat. Add @sage leaves{1%bunch of about 20 leaves}, @walnuts{1/3%cup}(chopped). Fry the @sage leaves|sage{} and @walnuts for about a minute, stirring occasionally. Add the @&(~2)gnocchi{} to the skillet, placing them in an even layer. Continue to fry everything for ~{3-4%min}, stirring occasionally, until the gnocchi start to crisp up. Keep an eye on everything to watch for burning. If you start to see the @sage leaves|sage{} or @walnuts{} burning, the dish is done! Remove it from heat immediately. Season with @salt{} and @-pepper{} to taste. Serve.
